“In his brilliant clear pale yellow to platinum reflections, he immediately flatter nose with good intensity fruity in which one discerns both citrus (grapefruit, tangerine) and white peach flesh, haloed some iodine notes. Agitation brings a fresh vegetable, menthol and sappy. The change will be to the benefit of the fruit. The attack is supple, farm mouth environment, good aromatic scale, the fat is offset by a balanced acidity. What again citrus lining the palace, exhilarated by a small limestone minerality type. This is a prelude to a final life and salivating to be dominated by lemon and black pepper spice.”
Food pairing
It will be the perfect companion of a salmon with sorrel, langoustine mayonnaise, a gratin of crayfish tails, or a simple plate of Belon.
Designation
BETWEEN TWO-SEAS (Dry White) In the heart of the Entre-Deux-Mers, halfway between the Garonne and Dordogne, 15km south of Saint-Emilion and 15km north of Sauternes. Near the watershed line at an average height of 78 meters.
History
The field produced mainly white wines when creating the appellation Entre-Deux-Mers in 1934. It is one of the first designations of origin in France.
